Slice potatoes into wedges and soak for 15-30 minutes in cold water.**

Drain the wedges and pat them dry with a paper towel. Toss with olive oil and press into the parmesan cheese mixture making sure all the potatoes are evenly coated.

*Grated parmesan cheese will stick better to the sweet potatoes. However, if using shredded cheese, place it in a plastic bag and use a rolling pin to make it finer.**Soaking draws out excess starch allowing the sweet potatoes to fry up crispy.
