Vortex Air Fryer Sweet Potato Orange Cups

These sweet sides are easy to make and truly unique. This is on treat my son loves and he is impossible to get to eat veggies!

How to Make Vortex Air Fryer Sweet Potato Orange Cups:

Place sweet potatoes in a large saucepan and bring to a boil. Reduce heat; cover and cook just until tender, 25-30 minutes. Drain. You can also just use canned Yams if you prefer. Two cans equal three. In a large bowl, beat the sweet potatoes, sugar, cream, and butter on low speed until smooth. Remove pulp from oranges, leaving a shell. I use a juicer – it empties the oranges very well. I slice a small portion of the orange off the bottom to make it so they can stand up straight. Spoon sweet potato mixture into shells and top with mini marshmallows. The more you can cram on there, the better! Preheat the Vortex Air Fryer – 350 on Bake. Cook for 4 minutes – just long enough to toast the top. Using the air fryer makes them super crunchy like Smores! This delicious side is truly unique!

Equipment

Ingredients  

  • 3 large sweet potatoes Can also use 2 cans of Yams
  • ¼ cup brown sugar
  • 2 tablespoons light cream
  • 2 tablespoons butter
  • ¾ cup miniature marshmallows
  • 8 medium oranges

Instructions 

  • Place sweet potatoes in a large saucepan and bring to a boil. Reduce heat and cover and cook just until tender, 25-30 minutes. Drain.
  • Preheat the Air Fryer to 350°F.
  • Mash sweet potatoes, sugar, cream, and butter in a large bowl until smooth.
  • Slice ¼ inch off each end of the orange and cut the oranges in half.
  • Remove the pulp from the oranges but leave the shells intact.
  • Place orange shells in the air fryer basket and fill with the sweet potato mixture. Top with the marshmallows.
  • Cook for 4-5 minutes or until marshmallows are golden brown.
