Vortex Air Fryer Mushroom Stuffed Bell Peppers
This is a fantastic meatless meal that can be made in your Vortex Air Fryer in minutes!
Gather your ingredients!
Preheat air fryer at 350℉.
In a saucepan, add the chopped mushrooms and the spinach and cook over medium-high heat for 8 minutes or until cooked.
Cut off the tops of the peppers and spoon out the seeds and ribs.
Fill the peppers with the mix of mushrooms and spinach.
Crack an egg on each pepper. Place the peppers in the air-fryer basket for around 15 minutes or until tender.
Top each pepper with mozzarella and leave until it melts (around 2 minutes more).

- 10 mushrooms chopped
- 1 cup of spinach
- 1 cup of shredded mozzarella
- 3 eggs

- Preheat air fryer at 350℉ on BAKE. The rack will be on the LOWEST level while cooking.
- In a saucepan, add the chopped mushrooms and the spinach and cook over medium-high heat for 8 minutes or until cooked

- Fill the peppers with the mix of mushrooms and spinach
- Crack an egg on each pepper
- Place the peppers in the air-fryer for around 15 minutes or until tender.
- Top each pepper with mozzarella and leave until it melts (around 2 minutes more)
