Vortex Air Fryer Mushroom Stuffed Bell Peppers

This is a fantastic meatless meal that can be made in your Vortex Air Fryer in minutes!

Gather your ingredients!

Preheat air fryer at 350℉.
In a saucepan, add the chopped mushrooms and the spinach and cook over medium-high heat for 8 minutes or until cooked.

Cut off the tops of the peppers and spoon out the seeds and ribs.

Fill the peppers with the mix of mushrooms and spinach.


 

Crack an egg on each pepper. Place the peppers in the air-fryer basket for around 15 minutes or until tender.

Top each pepper with mozzarella and leave until it melts (around 2 minutes more).

Equipment

Ingredients  

  • 3 large bell peppers
  • 1 cup mushrooms sliced
  • 1 cup spinach
  • 1 cup mozzarella shredded
  • 3 eggs

Instructions 

  • Preheat the air fryer to 350°F.
  • Cut ¼-inch off the top of the bell pepper and scoop out the seeds.
  • Add the mushrooms and spinach to an air fryer safe pan and cook them until they are tender about 5-6 minutes.
  • Fill the peppers with the mushrooms and spinach, and crack 1 egg into each pepper.
  • Place the peppers in the air-fryer basket and cook for 13-15 minutes or until the egg is cooked. Season with salt & pepper.
  • Sprinkle the mozzarella cheese on top and cook for an additional 2 minutes or until the cheese is melted.
