Vortex Air Fryer Mojo Cajun Pork Loin

This fantastic dish is awesome for dinner or as a great addition to Cuban sandwiches!

Trim the extra fat from the pork loin or roast.

Mix all other ingredients in a bowl and combine. You can either use a bag or a bowl with a lid. Pour marinade over pork and seal. Refrigerator at least 1 hour or up to 24 hours. I normally start injecting the marinade into the pork before it goes into the fridge. I actually do this several times if I am marinating overnight!

Preheat your Vortex on BAKE to 350°F.

Remove from fridge and let sit for 20 minutes until room temp. Inject some of the marinade into the loin. I try to get as much as possible into it!

Place the loin on the rack, fat side up.

Slice the top of the pork loin diagonally through the fat if you want to add some flair. Not necessary but it makes it look awesome!

Wrap the pork loin in tin foil – tightly. Once the air fryer is to temp, put the rack on the LOWEST level. Cook for 10 minutes and then remove the loin and unwrap it. Place back in and cook 15- 20 minutes or until the internal temp is 145°F. Let sit for 5 minutes and slice and serve.

NOTE – cook times will vary a lot depending on the size and shape of the loin. It is highly suggested you start checking temps at the 10-minute mark and check every 5 -10 minutes after.

Ingredients  

  • 2 pound pork tenderloin
  • 3 cloves garlic diced
  • 1 teaspoon salt
  • ½ cup orange juice
  • 2 tablespoons lime juice
  • ¼ cup olive oil
  • 1 tablespoon fresh oregano chopped
  • ¼ teaspoon ground cumin
  • Salt to taste
