Stuffed Twice “Baked” Potatoes

This is the BEST Twice Baked Potato recipe you’ll find. Best of all? It's not even baked, it’s made in the Air Fryer! This is creamy, crunchy, crispy, tangy and all the things a good baked potato should be. The perfect side dish for any meal but also great as an appetizer!

  • 2 Potatoes washed and scrubbed
  • 2 Tsp olive oil
  • 1 Avocado
  • Cup sour cream
  • 1 Tbsp lime juice
  • 1 Tsp garlic powder
  • ¼ Tsp onion powder
  • 4 Tbsp bacon crispy and chopped
  • 1 Tbsp chives chopped
  • Salt and pepper to taste


  • With the help of a fork, poke potatoes a few times. Brush with olive oil and sprinkle with sea salt. Place in the air fryer and cook at 400 degrees for 30 minutes or until soft.
  • Meanwhile prepare the filling. In a small bowl mash the avocado, mix in with lime juice, garlic powder, onion powder, heavy cream and salt and pepper to taste. Mix until everything is well incorporated.
  • Remove potatoes from the air fryer and make a cut in the middle. Stuff with the zesty, creamy guacamole, bacon and chives.
