Instant Pot Beef Stew Made w/ Leftover Beef Ribs or Steak

As I always say…use what you got! In this case, I had the ribs of a standing rib roast. Really great bones mean I need to make really great broth!

Then really great soup…like Beef Stew!!

This meal is also amazing for leftover steak or roast. You can also just pick up some inexpensive stew meat. This meal can be made with just about any beef!

I cooked the bones in my Instant Pot for about 12 hours. I use Better than Bullion beef consomme. It’s my fav!!

Normally you would make the roux and then add meat but since I cooked the broth in the Instant Pot, I just grabbed a pan and made the roux and poured it in with the broth. You can remove the broth and cook everything in one pan. It just depends on how many pans you want to wash!

Once you are done cooking the broth – get as much meat as possible off the bones. I also used a small sliver I had leftover from the roast too. You can use roast – steak – or any other kind of beef basically!

In a pan (or in the Instant Pot) melt butter and sautee the onions. Then pour in the red wine and cook it down. You can cook the meat in it or just dump it all in the pot. Up to you!

Add all of the other ingredients to the pot. Set to stew and let it cook!

Ingredients

  • 1 pound beef leftover beef or steak, trimmed and cut into inch cubes
  • 3 cups beef broth bullion or consomme
  • 4 teaspoons oil or butter I prefer butter but it's a choice
  • 1 tsp garlic minced
  • ¼ cup all-purpose flour
  • ¼ teaspoon freshly ground pepper
  • 1 cup red wine
  • 2 bay leaves
  • 1 onion peeled and chopped
  • 5 carrots peeled and cut into 1/4-inch rounds
  • 1 cup corn Corn on the cob cut off is great!
  • 1 cup peas frozen or freesh
  • 1 cup potatoes peeled and cut into 3/4-inch cubes
  • 2 teaspoons salt

Instructions

  • Place the ribs in the beef broth in your Instant Pot or slow cooker. Cook for 7-10 hours. You can skip this step if you have stew meat and beef broth.
  • Remove the meat and separate the meat from the bones and fat. Cut into 1-inch cubes.
  • You have a choice here - leave broth in the pan and cook the veggies in another pan. OR pour the broth in a bowl and use the sautee feature on the Instant Pot.
  • Heat two tbsps of oil or butter in a pan or your Instant Pot. Sautee onion and garlic until translucent. Also, cook the meat at this step IF using raw meat. Precooked meat doesn't need to be.
  • Add the rest of the butter or oil. Sprinkle on a little flour and mix until you get hefty gravy.
  • Start pouring in red wine and mix until mixed well. I like to mix in a little broth as well. Maybe half a cup.
  • Mix everything together in the Instant Pot. Set on Stew and let it cook.
  • Let it slow release and it is done!
